My favorite day-after recipe is one I think I like just as well asthe traditional dinner — and it’s easy too. Treat yourselfto a grilled corned beef sandwich with Swiss cheese. This year Ipicked up a package of Finlandia Light Swiss Cheese that wasn’t atall rubbery and at only 50 calories per slice I used two pieces persandwich. For the bread use dark or light rye. Heat a little butter ina frying pan and place sandwich(es) in the melted butter and brownlightly on both sides. You can try spray-on butter for the paninstead to save a few more calories.
